Our certified Organic Mexican Chiapas comes from small growers in mainly the Soconusco region of the State of Chiapas Mexico. The growers partner with a certified mill in Tapachula who not only mills the coffee but cups and evaluates the end result. Although people purchasing Organic want to know their coffee is preserving and protecting the environment, they also want a quality cup, one that will stand out, so great pride is taken to eliminate defects that can affect the final cup.
The Soconusco region of Chiapas has an elevation of 1,100 meters and is known for being the most productive region of Mexico when it comes to the coffee harvest. Much of this is due to the use of natural forest that provide shade for the coffee. This is truly a cup that not only protects the environment but also one where a partnership has grown between mill and growers, creating sustainability for all.
