The farm is in the Eastern end of the Cordillera del Balsamo Municipality of Comasagua. The volcano is San Salvador, also known as Quetzaltepec. This coffee is processed using the semi-washed method which gives a depth and uniqueness to the flavor profile. San Emilio is located close to the city of San Salvador, but 3,000 to 4,000 feet elevation in the neighboring mountain range.
Produced by Cafeco, a large farm extending from about 900 - 1800 meters. Mostly heirloom bourbon (the pulped natural is bourbon from 1400m+). Coffee is pulped at the farm and dried on traditional El Salvador tile patios at Cafeco's central dry mill nearby. This community-minded farm sponsors a school that is almost on the farm, and has a medical clinic.
Harvested November through March.
